Paul Newman died!

I liked Paul Newman. I will share with you the yummiest meal ever. This was my mom's creation, for a recipe contest using Newman's Own salad dressing. This is the meal that made me start liking most vegetables. :) Mom had another name for it, but I don't recall what it was. I just call it Noodle Stuff.

Noodle Stuff

1 package no-yolk egg noodles
1 bottle Newman's Own Olive Oil & Vinegar salad dressing
1 block feta cheese - I use Athenos Basil & Sundried Tomato
1 small can sliced black olives, drained
1 tomato, diced
1 zucchini, chopped
1 yellow squash, chopped
garlic, diced (I use a lot when Josh lets me, but he's not a garlic fan so your choice)
julienned carrots
sliced baby bella mushrooms
steamed broccoli, chopped

You can add anything else that catches your fancy. I'll throw in diced green & red bell peppers a lot, sometimes some red cabbage, etc.

In a little olive oil, stir-fry carrots and squashes until almost tender. Add mushrooms and fry a couple more minutes. Meanwhile, steam broccoli and boil noodles. When noodles are done, add everything together. Crumble feta. Add raw diced tomatoes, with the rest of the vegetables. Pour in Newman's Own, stir, and eat as main or side dish.

Wow, this sounds fantastic! I'll have to try it -- perhaps tonight.

I wonder if, instead of Newmans, I could use some roasted garlic balsamic vinegar and oil. I bet I could, and I bet it'd be good too!

I love people who post recipes. I'm a total recipe thief.

Thanks! Give it a try. The Newman's Own does make it spectacular. I'd think with balsamic, you might prefer eating it cold rather than hot. (Well, *I* might. LOL)

Oh wow, haven't you ever had veggies in sauteed balsamic? You use fresh ginger, balsamic vinegar, a little soy sauce, and a slight bit of corn starch. It makes a sort of glaze, and it's very very tasty.

Nope, I've never had that. I've had balsamic in pasta salads and regular salads, but I'm usually pretty plain when I fry my veggies. I should probably branch out more. I'll have to get some ginger and try that.
