I liked Paul Newman. I will share with you the yummiest meal ever. This was my mom's creation, for a recipe contest using Newman's Own salad dressing. This is the meal that made me start liking most vegetables, and even my pickiest child begs for it and would eat the whole pot if allowed. Mom had another name for it, but I don't recall what it was. I just call it Noodle Stuff.
Noodle Stuff
1 package extra large no-yolk egg noodles
1 bottle Newman's Own Olive Oil & Vinegar salad dressing
1 8oz block feta cheese (Or more. More is good.) - I use Athenos Basil & Sundried Tomato.
1 small can sliced black olives, drained
1 tomato, diced
1 zucchini, chopped
1 yellow squash, chopped
Garlic, diced
Red onion, diced
1 green bell pepper, diced
1 sweet bell pepper (any color), diced
1 bag julienned carrots
sliced baby bella mushrooms
steamed broccoli, chopped
In a little olive oil, stir-fry carrots, squashes, & peppers until almost tender. Add mushrooms, onion, & garlic and sautee a few more minutes until soft. Drain excess water from pan.
Meanwhile, steam broccoli and boil noodles in very large pot. When noodles are done, drain and combine everything together. Crumble feta and add to pot, as well as olives. Add raw diced tomatoes, with the rest of the vegetables (the heat from the noodles and veggies cooks them to perfection). Pour in a very liberal amount of Newman's Own, stir, and eat warm as main or side dish. I like mine salted, but my kids don't.
