Whole30 Day 17

B: Sweet potato hash with two overmedium eggs, almonds

L: Anchovies, red bell pepper, green olives, and two slices of tomatoes with EVOO, ACV, & parsley.

Snack: Almonds and raisins

D: 2 bowls of sweet potato chili

Do you have a recipe for that sweet potato chili?

Josh and I just threw it together ourselves, but it's pretty easy. The only parts I'm not 100% sure of are the seasonings, because we don't measure, we just shake them until it looks like enough.

Brown about 1 - 1.5 lbs ground beef.

In large pan on medium/m-high heat, drizzle some olive oil. Sautee medium-sized peeled, diced sweet potato. After a few minutes softening, add diced onion (we use red), garlic, green and red bell peppers. Sautee for a few minutes more until veggies soften, stirring often.

Add drained, browned meat and two cans fire roasted diced tomatoes.

Add white pepper, black pepper, cayenne pepper, crushed red pepper, garlic salt, a hint of italian seasoning and cumin, and lots of chili powder. Stir well, continuing to stir often until sweet potatoes soften all the way. Add a dab of water if needed.

Josh actually seasoned the meat while browning (adding a little water to coat and cooking it out), but we had to add more seasoning to the whole pot since it wasn't enough at first.

Ps: dont drain the fire roasted tomatoes! Throw them both in, liquid and all
